This course explores the unique cuisines of Ashkenaz, Sepharad and the Middle East and examines agricultural practices, cooking, Jewish/ Christian/Muslim relations concerning laws and taboos in relationship to food preparation and consumption.

We'll delve into the origins of Ashkenazic “Humras” or Strictures, as well as other key halakhic issues around kashrut from the 8th16th centuries. We also will prepare meals and recipes from Medieval cookbooks and literature and examine kabbalistic notions of consuming fruits, vegetables and meat.
